You will have a better tasting potato salad if you use red potatoes. They won’t absorb a lot of the dressing. They don’t break apart as easily as the white potatoes. The skins are edible so you don’t need to peel them.
Scrub and wash the potatoes, removing any eyes or sprouts. The put the whole unpeeled potatoes in a large pan with cold water covering the potatoes. Add 1 to 2 teaspoons of salt for each quart of water. Make sure you put a lid on the pan and boil the potatoes until they are fork tender but still firm. Drain the potatoes and allow them to cool before peeling off the skins. Cut into chunks and use your favorite dressing and other ingredients.
